Our Executive Chef takes great care in planning the far, procuring the very best ingredients, and personally overseeing every aspect of the culinary experience while dining at the Lodge. Our Angler’s Table presents the opportunity to share stories, meet new people, enjoy a meal together and end a perfect day.
Our well-curated bar includes house spirits, wines and Montana microbrews through dinner that are all included in your package. For a small add-on charge, we have high end liquors and a mixologist’s menu to choose from.
Madeleine Cantoni moved to Montana in 2017 when Hidden Canyon Lodge opened. “Madi,” as most refer to her, serves as the Executive Chef and onsite General Manager. With her adventurous nature and finely tuned palate, she creates simple yet elegant dishes with distinct flavor combinations that showcase local ingredients, superior products and imaginative presentations.
Born in Crested Butte, Colorado, Madeleine found her calling as a small child while spending time in her parents’ restaurants and ski lodge. She received her culinary arts degree, with honors, at the prestigious Johnson & Wales University in Providence, Rhode Island and did her apprenticeship in Bournemouth, England. Her extensive experience includes working a World’s Fair, a Presidential inaugural event, The Piccadilly, Ridgewells Catering, Charlie Byrd’s Jazz Club & The Jockey Club, as the Executive Chef at several private clubs, and as General Manager of Dining at University of Akron.
Now, she delights guests and shares her vast experience and culinary skills with our guests at Hidden Canyon Lodge.
