Executive Chef/Lodge Manager
Born deep in the mountains of Colorado, Madeleine Cantoni found her calling to cuisine as a small child while spending time in the restaurants and lodge run by her parents in Crested Butte. She pursued her culinary degree at the prestigious Johnson & Wales University and apprenticed in Bournemouth, England. Her extensive experience ranges from working a presidential inaugural event to well-known restaurants such as Charlie Byrd’s Jazz Club in Washington, DC and the world renowned Jockey Club in Las Vegas.
She now returns to her mountain roots to share her vast experience and culinary skills with our guests at Hidden Canyon Lodge. With her adventurous nature and finely tunes palate, she creates simple yet elegant dishes with distinct flavor combinations that showcase local ingredients, superior products and imaginative presentations.
